Ingredients
- 2 boneless chicken breasts, cut into ½ inch cubes
- Juice of 1 lemon
- ¼ cup coconut milk
- 1 tablespoon oil
- 4-5 garlic cloves, chopped
- 1 medium onion, chopped
- 2 lemon grass stalks, sliced
- 2-3 kaffir lime leaves
- 3 cups chicken stock
- Salt to taste
- ½ teaspoon crushed black peppercorns
- 1-2 spring onions, chopped
Method
- Heat oil in a non-stick pan, add garlic and onion and sauté for a couple of minutes.
- Add lemon grass and sauté till fragrant.
- Add kaffir lime leaves and chicken and sauté for three minutes.
- Add chicken stock, mix and bring the mixture to a boil.
- Add coconut milk, lemon juice, salt and crushed peppercorns. Mix well and simmer for a minute
- Pour the soup into a serving bowl and garnish with spring onions. Serve hot.
