Ingredients

  • 2 boneless chicken breasts, cut into ½ inch cubes
  • Juice of 1 lemon
  • ¼ cup coconut milk
  • 1 tablespoon oil
  • 4-5 garlic cloves, chopped
  • 1 medium onion, chopped
  • 2 lemon grass stalks, sliced
  • 2-3 kaffir lime leaves
  • 3 cups chicken stock
  • Salt to taste
  • ½ teaspoon crushed black peppercorns
  • 1-2 spring onions, chopped

Method

  1. Heat oil in a non-stick pan, add garlic and onion and sauté for a couple of minutes.
  2. Add lemon grass and sauté till fragrant.
  3. Add kaffir lime leaves and chicken and sauté for three minutes. 
  4. Add chicken stock, mix and bring the mixture to a boil.
  5. Add coconut milk, lemon juice, salt and crushed peppercorns. Mix well and simmer for a minute
  6. Pour the soup into a serving bowl and garnish with spring onions. Serve hot.
