Ingredients list for Kutchi Mango Phajeta

  • 4 tablespoons Mango Pulp
  • 1/2 tablespoon Gram flour
  • 1/4 tablespoon Turmeric powder
  • to taste Salt
  • 4 cups Buttermilk (sour)
  • 1 tablespoon Oil
  • a pinch Asafoetida
  • 1/2 teaspoon Cumin seeds
  • 4-6 Curry leaves
  • 3 Green chillies chopped
  • 1/2 inch piece Ginger grated
  • 1 tablespoon Sugar /jaggery
  • 2 tablespoons Fresh coriander leaves chopped

Method

  1. Take besan in a bowl, add turmeric powder, salt and mango pulp. Mix well and add buttermilk, stirring constantly. Heat oil in a pan.
  2. Add asafoetida, cumin seeds, curry leaves, green chillies and ginger. When they begin to change colour, add besan mixture.
  3. Mix well adding sufficient water to get a thin consistency. Add jaggery and bring it to a boil. Add chopped coriander leaves and continue to cook for three to four minutes. Serve hot.
