Ingredients list for Kolambi Bhaat

  • 12-16 Basmati Rice
  • 1 1/2 cups Prawns soaked
  • 1/2 cup Fresh coriander leaves

Method

  1. Grind together coriander leaves, mint leaves, garlic, ginger, green chillies and ½ cup coconut with a little water to a smooth paste.
  2. Heat oil in a non-stick pan, add cinnamon, black cardamoms, star anise, cloves, cumin seeds and onions and sauté till onions turn a light brown.
  3. Marinate the prawns with juice of ½ lemon and salt. Add ground paste to the pan. Mix well and add prawns. Mix well so that the masala coats the prawns.
  4. Add rice and t3 cups water. Mix well and add salt. Mix again and squeeze the juice of the remaining ½ lemon half. Add coconut milk and mix again. Cover and cook till the rice is done.
  5. Switch off heat and let it stand for a few minutes before serving. Garnish with a little coconut and serve hot.
