How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Kesar Pista Rice Recipe

  • Rice 2 cups

  • Saffron a pinch

  • Pistachios, chopped 20

  • Ghee 4 tablespoons

  • Green cardamoms 4

  • Cloves 4

  • Sugar 1/2 cup

  • Raisins 20

  • Milk 1/2 cup

Method

Step 1

Soak rice in four cups of water for half an hour. Drain. Heat ghee in a pressure pan.

Step 2

Add green cardamoms, cloves and soaked rice and sauté.

Step 3

Add three cups of water, sugar, raisins and chopped pistachios and mix.

Step 4

Dissolve saffron in warm milk and add to the pan.

Step 5

When the rice is cooked a little, cover with the lid and cook on high heat till one whistle is given out.

Step 6

Lower the heat and cook for ten minutes. Open the lid and serve hot.
