Grilled Vegetable Sandwich Grilled vegetable sandwich with the flavours of basil leaves and parsley This recipe is from FoodFood TV channel By Sanjeev Kapoor 02 Jan 2016 in Recipes Course New Update Main Ingredients Thick Panini bread , Brinjal Cuisine Fusion Course Snacks and Starters Prep Time 11-15 minutes Cook time 6-10 minutes Serve Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Grilled Vegetable Sandwich 4 slices Thick Panini bread 1 large Brinjal 1 large Green capsicum 1 large Red capsicum Extra virgin olive oil for brushing to taste Salt to taste Black pepper powder 16-20 Fresh basil leaves 4 Cheese slices to taste Crushed red chillies Parsley for garnish Method Heat a griller. Cut red and green capsicums lengthwise into 1½-2 inch wide pieces. Brush the griller with extra virgin olive oil and place capsicums in it. Sprinkle salt, black pepper powder on top and brush capsicums with oil too. Close lid and grill till done from both the sides. Cut brinjal lengthwise into ½ inch thick slices. Sprinkle salt and black pepper powder on top and brush with oil. Brush a non stick pan with olive oil and heat it. Place brinjal slices on it and cook till done from both sides. Finely chop basil leaves. Brush bread slices with oil. Fold cheese slices and place on 2 bread slices. Sprinkle basil and crushed red chillies on them. Place 2-3 grilled capsicum pieces on it. Fold 2 grilled brinjal slices and place on it. Grill these on the griller. Grill the other slices as well. Place these slices on the slices with the vegetables and make sandwiches. Halve the sandwiches and serve immediately garnished with a parsley sprig.
