Ingredients list for Grilled Prawns With Pineapple Salsa

  • 500 grams Prawns deveined
  • 1/2 cup Pineapple juice
  • 2 teaspoons Olive oil
  • 1/2 teaspoon Oregano
  • 1/2 teaspoon Red chilli powder
  • to taste Salt
  • Satay sticks soaked for grilling
  • 1 1/2 tablespoons Lemon juice
  • 1/2 teaspoon Red chilli flakes
  • 1 Big Pineapple 1/2 cm cubes
  • 1 medium Red capsicum,seeded 1/2 cm cubes
  • 2 medium Cucumbers 1/2 cm cubes
  • 1 large Onion chopped

Method

  1. To prepare prawns whisk together pineapple juice, olive oil, dried oregano, red chilli powder and salt in a large bowl. Add the prawns and toss well. Marinate for thirty minutes.
  2. To make salsa whisk together lemon juice, red chilli powder, red chilli flakes and salt in a large bowl. Add pineapple cubes, capsicum cubes, cucumber cubes and chopped onion. Toss well to combine. Cover salsa and refrigerate until serving time.
  3. Preheat the griller, skewer prawns onto a satay stick and grill for three to four minutes on each side until cooked. Serve immediately with pineapple salsa.
