How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Green Rice Recipe

  • Basmati rice cooked 3 cup

  • Green capsicum 1/4 inch pieces 2 medium

  • Spinach 10-15 leaves

  • Green peas 1/2 cup

  • Oil 3 tablespoons

  • Garlic finely chopped 10-15 cloves

  • Cumin seeds 1 teaspoon

  • Green chilli roughly chopped 4

  • Onion cut into ¼ inch pieces 2 medium

  • Salt to taste

  • Lemon juice 1 teaspoon

Method

Step 1

Heat the oil in a deep non-stick pan. Add the garlic and cumin seeds and sauté for a minute. Add the spinach, capsicums and green peas and continue to sauté. Add the green chillies and sauté for a minute. Add the onions.

Step 2

Mix well and cook for another minute. Add the rice and salt. Toss well. Add the lemon juice and mix gently.

Step 3

Serve hot.
