Ingredients list for Green Gazpacho - SK Khazana

  • 4Mediu Medium cucumbers
  • 4 Medium green capsicums
  • 2 Medium green apples
  • 2 tablespoons Celery finely chopped
  • 2 Green chillies
  • 12-14 Walnut kernels roughly chopped
  • 2 teaspoons Garlic finely chopped
  • to taste Salt
  • to taste Black peppercorns crushed
  • 2 tablespo for drizzling Olive oil
  • 2 teaspoons Vinegar

Method

  1. Peel and cut cucumbers into small cubes. Halve capsicums and remove seeds. Core the apple and cut capsicums and apple into cubes. Transfer all these into a blender jar.
  2. Add celery, broken green chilli, walnuts, garlic, salt, crushed peppercorns, 2 tablespoons olive oil and vinegar and blend into a smooth mixture.
  3. Strain the mixture into another bowl. Pour into individual bowls. Drizzle some olive oil and sprinkle some crushed peppercorns.
  4. Serve immediately.
