Ingredients
- 2 medium cucumbers
- 2 medium green capsicums
- 1 medium green apple
- 2 tablespoons finely chopped celery
- 1 green chilli 6-8 walnut kernels, roughly chopped
- 1 teaspoon chopped garlic
- Salt to taste
- Crushed black peppercorns to taste + for sprinkling
- 1 tablespoon olive oil + for drizzling
- 1 teaspoon vinegar Olive oil for drizzling
Method
- Peel and cut cucumbers into small cubes. Halve capsicums and remove seeds. Core the apple and cut capsicums and apple into cubes. Transfer all these into a blender jar.
- Add celery, broken green chilli, walnuts, garlic, salt, crushed peppercorns, 2 tablespoons olive oil and vinegar and blend into a smooth mixture.
- Strain the mixture into another bowl. Pour into individual bowls. Drizzle some olive oil and sprinkle some crushed peppercorns.
- Serve immediately.
