If there is one vegetable that is truly a nutritional hero then it is bound to be the carrot. A goldmine of nutrients, this is the reason they can be even termed as worth the other ‘karat’ (as in gold)! Ranging in colours from orange, black, pink to red, yellow and white, this delicious vegetable is within the reach of rich and poor alike and is rightly called the universal root. The best role that this winter vegetable can play – chomp on one as it is an excellent snack!

Ingredients for Gajar Burfi Recipe

  • Carrots thickly grated 5 medium

  • ghee 2 tbsps + + for greasing

  • condensed milk 1/4 cup

  • sugar 1/4 cup

  • A pinch of green cardamom powder

  • mawa 1 1/2 cups

  • pistachios slivered 1 tablespo + for sprinkling

  • almonds slivered 1 tablespo + for sprinkling

Method

Step 1

Grease a barfi tray with a little ghee and set aside.

Step 2

Heat 2 tbsps ghee in a non-stick deep bottom pan, add the carrots and sauté for 1-2 minutes on high heat.

Step 3

Cover and cook for 8-10 minutes on medium heat, sautéing occasionally. Lower the heat and add condensed milk, sugar and mix well. Add a pinch of green cardamom powder, and mix well.

Step 4

Cook on medium heat till almost all the moisture is evaporated, stirring continuously. Add mawa and mix well. Stirring occasionally till well combined and the mixture leaves the sides of the pan.

Step 5

Add slivered pistachios and almonds, remaining ghee, and mix well. Transfer the mixture to the greased burfi tray and spread evenly. Tap it so there are no air pockets.

Step 6

Sprinkle slivers of almonds and pistachios, refrigerate until set. Cut into desired shape and serve.
