Ingredients

  • 1½ cups shelled green peas
  • 2 tbsps butter
  • 1 medium onion, roughly chopped
  • 2-3 garlic cloves, crushed
  • 1 tbsp chopped leeks
  • 2-3 iceberg lettuce leaves
  • Salt to taste
  • Black pepper powder to taste
  • 7-8 fresh mint leaves
  • Vegetable stock, as required
  • 2 tbsps cream
  • Few thin strips of red capsicum 

Method

  1.  Heat butter in a nonstick pan, add onion, garlic and leeks and saute for 1 minute.
  2. Add green peas, lettuce leaves, 1 cup water, salt and pepper powder and mix.
  3. Add mint leaves and let the mixture come to a boil.  Cover and cook for 2-3 minutes.
  4. Strain the peas and cool.  Put them into a mixer jar and puree with a little cold stock.
  5. Pour this back into the pan and heat.  Adjust salt.
  6. Add cream and mix.
  7. To serve place red capsicum strips in the center of a soup bowl, pour the soup all around it and serve hot.
