By Sanjeev Kapoor 04 Nov 2014 in Recipes Veg New Update French Pea and Mint Soup Main Ingredients Shelled green peas, Butter Cuisine French Course Soups Prep Time 10-15 minutes Cook time 15-20 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients 1½ cups shelled green peas 2 tbsps butter 1 medium onion, roughly chopped 2-3 garlic cloves, crushed 1 tbsp chopped leeks 2-3 iceberg lettuce leaves Salt to taste Black pepper powder to taste 7-8 fresh mint leaves Vegetable stock, as required 2 tbsps cream Few thin strips of red capsicum Method Heat butter in a nonstick pan, add onion, garlic and leeks and saute for 1 minute. Add green peas, lettuce leaves, 1 cup water, salt and pepper powder and mix. Add mint leaves and let the mixture come to a boil. Cover and cook for 2-3 minutes. Strain the peas and cool. Put them into a mixer jar and puree with a little cold stock. Pour this back into the pan and heat. Adjust salt. Add cream and mix. To serve place red capsicum strips in the center of a soup bowl, pour the soup all around it and serve hot.
