Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Fragrant Mushrooms Recipe

  • Shiitake Mushrooms 18

  • Butter 4 tablespoons

  • Garlic crushed 1 clove

  • Fresh thyme chopped 1 tablespoon

  • Lemon rind grated 1 teaspoon

  • Salt to taste

  • Black peppercorns freshly ground to taste


Step 1

Cut six large squares of double-thickness aluminium foil. Place three mushrooms in the centre of each foil.

Step 2

Cream together butter, garlic, thyme, lemon rind, salt and pepper in a bowl.

Step 3

Spread a spoonful over each mushroom. Pull the edges of the foil up over the mushrooms and turn over to seal fillings.

Step 4

Heat the Grill Pan. Place the foil parcels on it for six to eight minutes or till mushrooms are tender. Serve immediately.
