Ingredients list for Fennel Marinated Paneer And Olive Skewers
- 1 tablespoon Fennel seeds
- 2 tablespoon Paneer
- 200 grams Paneer (cottage cheese)
- 1 teaspoon Lemon zest
- 1 tablespoon Lemon juice
- 2 tablespoons Olive oil
- 2 teaspoons Black pepper powder
- 20 Fresh mint leaves chopped
- 1 Cucumber peeled and seeded
- 10 Black olives pitted and halved
Method
- Cut the paneer into three-fourth inch cubes. Toast sesame seeds in a dry pan. Mix fennel seeds, toasted sesame seeds, lemon zest, lemon juice, oil and black pepper powder in a bowl. Add the paneer cubes and toss well.
- Cover and marinate for three to four hours in the refrigerator. Sprinkle the paneer with five to six chopped mint leaves. Cut the cucumbers into half inch cubes
- Thread one from remaining mint leaves, one olive piece, one cucumber cube and one paneer cube on to each skewer. Chill and serve.
