You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Double Egg Chicken Roll Recipe

  • Eggs 8

  • Readymade chicken tikka cut into strips 200 grams

  • Refined flour tortillas 4

  • Salt to taste

  • White pepper powder to taste

  • Butter as required

  • Large onion sliced 1 + to serve

  • Medium tomato cut into strips 1

  • Medium green capsicum cut into strips 1

  • Green chillies chopped 2-3

  • Green chutney as required

Method

Step 1

Heat a non-stick pan, place a tortilla and cook for 1 minute, flip and break 2 eggs on top, spread it evenly.

Step 2

Sprinkle salt and white pepper powder, cook for 1-2 minutes. Flip and cook for 1-2 minutes.

Step 3

Apply butter on top, sprinkle sliced onion, tomato strips, green capsicum strips, green chillies and chicken tikka strips. Sprinkle salt and a drizzle green chutney, fold it into a roll and take it off the heat.

Step 4

Cut each roll into half and place on separate serving plates and serve hot with sliced onion and green chutney.
