Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Dal Khichdi Recipe

  • Split green gram with skin (chilkewali moong dal) soaked 1/2 cup

  • kolam rice soaked 1/2 cup

  • Desi ghee 2 tablespoons

  • Cloves 7-8

  • Cinnamon 2 one-inch sticks

  • Asafoetida 1/4 teaspoon

  • Ginger chopped 1 inch piece

  • French beans chopped 7-8

  • Carrot cubed 1 medium

  • Shelled green peas 1/4 cup

  • Salt to taste

  • Turmeric powder 1/2 teaspoon

  • Carrot grated 1 medium

  • Green chillies 1-2

  • Split skinless green gram (dhuli moong dal) soaked ½ cup

Method

Step 1

Heat ghee in a pressure cooker.

Step 2

Add cloves, cinnamon, asafoetida, ginger, chilkewali moong dal, dhuli moong dal, and rice and mix well.

Step 3

Sauté for 2-3 minutes.

Step 4

Add French beans, cubed carrot, green peas, salt, turmeric powder, grated carrot and 5 cups water and mix.

Step 5

Break green chilli and add. Close the pressure cooker with the lid and cook under pressure till 2-3 whistles are given.

Step 6

Open the cooker when the pressure reduces completely and serve piping hot.
