Ingredients list for Cucumber Icecream

  • 1 cup Cucumber juice
  • 1/4 cup Powdered sugar
  • 1 tablespoon Lemon juice


  1. Mix powdered sugar and cucumber juice and stir till the sugar is completely dissolved. Add lemon juice and stir.
  2. Add honey and cream and whisk the mixture till soft peaks form. Spoon the mixture into a plastic container with a tight fitting lid.
  3. Freeze overnight or till well set. Scoop out into individual bowls and serve decorated with a mint sprig.
