Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Cream of Spinach Soup - SK Khazana Recipe

  • Spinach leaves (palak) fresh 1 medium bunch

  • Fresh cream 2 tablespoons + for drizzling

  • Butter 1/2 tablespoon

  • Garlic finely chopped 1 1/2 teaspoons

  • Refined flour (maida) 1/2 tablespoon

  • Milk 2 cups

  • Salt to taste

  • White pepper powder 1 teaspoon

Method

Step 1

Heat butter in a non-stick pan, add garlic and sauté for 30 seconds.

Step 2

Add refined flour, mix and sauté for 30 seconds. Add milk and mix till smooth. Cook till the sauce thickens slightly.

Step 3

Add spinach leaves and mix well. Cook for 1 minute or till the spinach softens.

Step 4

Add salt and white pepper powder mix and take the pan off the heat. Let the mixture cool. Transfer into a blender jar and blend into a smooth mixture.

Step 5

Strain the soup into another pan and place the pan on heat.

Step 6

Add fresh cream and mix well. Cook for 30 seconds and take the pan off the heat.

Step 7

Transfer into a serving bowl, drizzle a little fresh cream on top and serve hot.
