Add some castor sugar and some water, mix and cook for 10-12 minutes. Preheat oven at 180ºC. Grease a baking tray with some butter. Cut cheddar cheese cube and roughly break mozzarella cheese. Roll out the pastry dough into thin sheet and refrigerate for 5 minutes. Place the sheet onto a worktop, cut it into roundels using small round serrated cookie cutter and place on a greased baking tray. Make small dents in the center of each roundel. Put some cranberry compote, chopped mozzarella, cheddar cheese and some cranberry syrup in the dents. Place the baking tray in preheated oven and bake for 10-12 minutes. Serve.
