Ingredients list for Crab And Chilli Crisps
- 250 grams Crab meat boiled and shredded
- 2 small Fresh red chillies
- 1 tablespoon Extra virgin olive oil
- 8 White bread slices crust trimmed
- 1/2 medium Onion
- 2 tablespoons Eggless mayonnaise
- 1 teaspoon Lemon juice
- as required Chilli garlic sauce
- a few sprigs Fresh parsley
Method
- Heat 1 tbsp extra virgin olive oil in a non stick pan. Cut 2 roundels from each bread slice with a round cookie cutter. The remaining bread can be ground in a mixer to make crumbs to be used as and when required.
- Saute the bread roundels in the non stick pan, turning sides, till golden on both sides.Finely chop fresh red chillies and put into a bowl. Finely chop onion and add to the chillies.
- Add eggless mayonnaise and crab meat and mix well. Add lemon juice and mix well. Chill the mixture in the refrigerator for a little while. Arrange the bread roundels on a serving plate. Drizzle a few drops of chilli garlic sauce over each roundel.
- Make small quenelles of the crab meal mixture with two teaspoons and place over each roundel. Put a few drops of chilli garlic sauce on top of the crab mixture and keep a small sprig of parsley over it and serve immediately.
