Ingredients list for Coffee Coconut Cookies
- 1 teaspoon Instant Coffee Powder
- 6 tablespoons Butter
- 200 grams Refined flour (maida)
- 1 cup Butter
- 150 grams Icing sugar
Method
- Preheat oven to 180º C.
- Put butter and icing sugar in a bowl and beat with an electric beater till light and fluffy.
- Put flour in a bowl, add coffee powder and coconut and mix well.
- Add flour mixture to the butter-sugar mixture and knead into stiff dough.
- Divide dough into eight equal portions and shape them into cookies. Place the cookies on a baking tray, place the tray in the preheated oven and bake for fifteen to twenty minutes.
- Take the tray and out and let the cookies cool down to room temperature.
- Serve or store in airtight containers.
