Ingredients list for Coconut Lime Ice Cream
- 1/4 cup Dessicated coconut
- 1/3 cup Coconut powder
- 1 Lemon
- 1 litre Vanilla ice cream, softened
- 2 tablespoons Honey
Method
- Place the vanilla ice cream in a bowl.
- Add desiccated coconut, coconut powder and mix well.
- Add honey and mix. Grate the rind of the lemon and add.
- Squeeze the juice of the lemon and add. Mix well.
- Transfer the ice cream into a plastic container, close with a tight fitting lid and keep in the freezer to set completely.
- Scoop out the ice cream into serving bowls and serve.
