Chocolate Fudge Cake

This cake is something you make once and then keep getting back to – it becomes a go to recipe every time you crave chocolate cake, which in our case is pretty often! Silky smooth chocolate ganache sandwiched between layers of dark chocolate sponge topped with more ganache and whipped cream frosting – now common! Who would say no to this? Ingredients list for Chocolate Fudge Cake

  • Dark Chocolate and walnut cake 1 x 5 inch round
  • as required Brown Sugar 2 cups +
  • as required Sugar syrup
  • as required Chocolate sauce
  • 1 cup Whipped cream

Method

  1. Trim the hard crust of the cake. Slice the cake into half.
  2. Take a medium square card covered with aluminum foil. Spread a bit of ganache over it and place a cake slice over it. The ganache will ensure that the cake remains firm on the card. Drizzle some sugar syrup to keep the cake moist. Drizzle some chocolate sauce over the slice. Spread a portion of chocolate ganache evenly. Place the second slice of cake and repeat the process.
  3. Trim the top hard part of the cake all around.
  4. Cover the top and sides of the cake with some chocolate ganache. Dip palate knife in hot water and even out the chocolate ganache layer.
  5. Mix some ganache with ½ cup whipped cream. Fill this mixture into a piping bag fitted with nozzle. Fill remaining whipped cream into another piping bag fitted with a nozzle.
  6. Pipe out flowers with the ganache-cream mixture and the whipped cream all over the cake to decorate it.
  7. Serve.
