Ingredients

  • 2 cups yogurt
  • 1 garlic clove
  • ½ inch ginger, finely chopped
  • 2 green chillies, finely chopped
  • 2 medium cucumbers, peeled
  • 12-15 fresh mint leaves
  • Salt to taste
  • Ice cubes as required
  • Juice of ½ lemon
  • 2 tsps extra virgin olive oil
  • A pinch crushed black peppercorns
  • A pinch sumac powder
  • A fresh mint sprig

Method

  1. Place garlic, ginger and green chillies in a blender jar.
  2. Deseed, roughly chop cucumbers and put the jar alongwith yogurt, mint leaves and salt and blend till smooth.
  3. Add ice cubes and blend again. Add lemon juice and olive oil and blend once again.
  4. Serve chilled garnished with crushed peppercorns, sumac powder and mint sprig.
