Apply 1 tbsp red curry paste on both sides of each breast. Heat 2 tbsps oil in a non stick pan. Place chicken breasts on it and cook, turning sides, till well browned on both sides. Heat remaining oil in another non stick pan. Add remaining red curry paste and sauté for a minute. Add tamarind pulp and mix well. Cook for a minute. Add 5-6 tbsps water and stir to mix. Cook till it comes to a boil. Add brown sugar and mix well. Pour the sauce over chicken and coat them well with the sauce. Place chicken pieces on a serving plate and pour the sauce over it.
