Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken and Rice Soup Recipe

  • Boneless Chicken Breasts cut into small cubes 200 grams

  • Rice soaked and drained 1/4 cup

  • Oil 1 tablespoon

  • Garlic chopped 2 tablespoons

  • Celery chopped 1 tablespoon

  • Onion chopped 1 medium

  • Carrot peeled and cut into small cubes 1 medium

  • Chicken stock 4 cups

  • Salt to taste

  • Crushed black peppercorns 1/2 teaspoon

  • Red chilli flakes 1 teaspoon

  • Chopped spring onion greens 2 tablespoons

Method

Step 1

Heat oil in a non-stick pan, add garlic and sauté for ten seconds. Add celery and onion and sauté till the onion turns light brown.

Step 2

Grind half the rice to a smooth paste with sufficient water.

Step 3

Add carrots to the pan and mix well. Add chicken, remaining rice and rice paste, mix well and sauté for a minute.

Step 4

Add stock, salt, crushed peppercorns and red chilli flakes, mix well and cook till both chicken and rice get cooked completely.

Step 5

Transfer into a serving dish, garnish with spring onion greens and serve piping hot.
