Ingredients
- 200 grams chicken breasts, cut into small cubes
- ¼ cup rice, soaked and drained
- 1 tablespoon oil
- 2 tablespoons chopped garlic
- 1 tablespoon chopped celery
- 1 medium onion, chopped
- 1 carrot, peeled and cut into small cubes
- 4 cups chicken stock
- Salt to taste
- ½ teaspoon crushed black peppercorns
- 2 tablespoons chopped spring onion greens
Method
- Heat the oil in a non-stick pan, add the garlic and sauté for ten seconds. Add the celery and onion and sauté till the onion turns light brown.
- Grind half the quantity of the rice into a smooth paste.
- Add the carrots and mix well. Add the chicken, remaining rice and rice paste, mix well and sauté for a minute.
- Add the stock, salt, crushed peppercorns and mix well and cook till the chicken and rice gets cooked completely.
- Garnish with the spring onion greens and serve piping hot.
