Ingredients list for Chicken Cacciatore

  • 900 grams Chicken
  • to taste Salt
  • to taste Black pepper powder

Method

  1. Season the chicken pieces with salt and pepper powder. Heat oil in a large pan and fry the chicken pieces turning them over occasionally till they are lightly browned on all sides. Drain and keep aside.
  2. Add onion and cook till it turns pink. Add garlic, mushrooms and capsicum slices. Cook till the onion turns golden brown. Add the tomato paste and cook for two minutes. Add wine and bring to a boil, stirring continuously. Add tomato pieces and stir, pressing down the tomato pieces slightly. Add rosemary and oregano and mix well. Add chicken pieces and adjust seasoning. Cover and simmer for about twenty minutes, stirring occasionally. Once the chicken is cooked, uncover and cook till sauce thickens.
