Ingredients list for Broccoli Bites
- 1 medium broccoli separated into florets and blanched
- 1/2 cup Bread crumbs
- 3 Eggs
- 1/4 cup grated carrots
- 4 tablespoons Parmesan cheese powder
- A large pinch of crushed peppercorns
- Salt to taste
- 1 teaspoon Italian seasoning
- A few fresh thyme sprigs
- 1/2 cup grated processed cheese
- a few a few leaves Fresh mint leaves
- 1/3 cup thick yogurt
- Juice of ½ lemon
- to taste Black pepper powder
- 1 teaspoon honey
Method
- Preheat oven at 180°C. Place a silicon sheet on a baking tray.
- Roughly chop the broccoli florets into smaller pieces and place in a bowl. Add 2 eggs, breadcrumbs, carrots, Parmesan cheese powder, crushed peppercorns, salt, Italian seasoning and roughly chopped thyme and mix well.
- Add remaining egg and mix well. Add processed cheese and mix well.
- Dampen your palms with little water and divide the broccoli mixture into 8 equal portions and shape them into patties.
- Place patties on the baking tray and put the tray in preheated oven. Bake for 10-12 minutes.
- To make mint-yogurt dip, finely chop few mint leaves and place in a bowl. Add yogurt, lemon juice, salt, pepper powder and honey. Mix well.
- Remove patties from oven and place them on a serving dish. Garnish with mint leaves and serve hot with mint-yogurt dip.
