Ingredients list for Biscotti
- 1/4 cup Unsalted butter softened
- 1/2 cup Castor sugar (caster sugar)
- 1 1/2 cups Refined flour (maida)
- 1/4 teaspoon Salt
- 2 teaspoons Baking powder
- 1 teaspoon Coriander powder
- 1 teaspoon Lemon rind grated
- 1/2 cup Polenta
- 1 Egg lightly beaten
- 1 teaspoon Orange juice
- 1 teaspoon Orange zest grated
- 1/2 cup Almonds
- 1/2 cup Pistachios
Method
- Cream together butter and sugar in a bowl till smooth. Sift refined flour, salt, baking powder and coriander powder into the bowl with butter and sugar.
- Add the lemon rind, polenta, egg, orange juice and orange zest and mix together to make a soft dough. Stir in the almonds and pistachios and mix well.
- Halve the mixture and shape each half into a sausage. Place the sausages on a lightly greased baking sheet and keep in a warm place to prove. Preheat the oven 200°C.
- Bake the biscottis in the preheated oven for twenty five to thirty minutes or until the crust is firm. Allow to cool and then cut each biscotti into thin slices. Cool and then store in an airtight tin.
