Most families in Uttar Pradesh eat vegetarian food, although meat delicacies cooked in the Awadh style are world famous. Lucknow is famous for its biryanis and different meat preparations. A very interesting aspect of Awadh cuisine is the inspiration it draws from a myriad sources - seasons and celebrations, flora and fauna, personalities, poetry and colour.

Ingredients for Belfal Sherbet Recipe

  • Stone apple (belfal) 1

  • Sugar 1 cup

  • Crushed ice as required

Method

Step 1

Break the shell of the fruit. Remove seeds and scoop out flesh with the help of a spoon. (The flesh needs to be kept soaked in water for few hours and then pulp can be strained). Strain pulp through a sieve.

Step 2

Place sugar with three cups of water in a pan. Heat till sugar dissolves. Strain sugar syrup through a muslin cloth. Cool completely.

Step 3

Place fruit pulp and sugar syrup in a blender. Blend till smooth. Strain through a sieve. Serve chilled in tall glasses with lots of crushed ice.
