Ingredients 

  • 2 tablespoon balsamic vinegar
  • 1 cup dried figs blanched and chopped
  • 8-10 dried figs boiled and pureed
  • 1/2 cup brown sugar/jaggery
  • A few sprigs rosemary
  • Salt to taste

Method

  1. Heat a non-stick pan. Add chopped figs, pureed figs, brown sugar and rosemary sprigs, mix well and cook till sugar melts, stirring continuously.
  2. Add salt and balsamic vinegar and mix well. Cook for 2-3 minutes.
  3. Remove from heat and cool to room temperature. Store in airtight containers. The shelf-life of this jam is 1 month.
