Heat olive oil in a pan and sauté garlic for half a minute. Gently toss onions, potatoes, adding fresh rosemary and sun dried tomatoes. Add salt and crushed peppercorns. Transfer into a baking dish. Top with fresh breadcrumbs and parsley. Bake at 180°C for twenty to twenty five minutes. Serve hot.
