Ingredients for Baked Chicken Cordon Bleu Recipe

  • boneless chicken breasts 2

  • Refined flour (maida) 1 tablespoon

  • black pepper powder 1 teaspoon to taste

  • large ham slice 1

  • emmental cheese slices 2

  • egg 1

  • Salt 1 tablespoon

  • breadcrumbs 1½ tbsps + cup

  • Parmesan cheese powder 1/4 cup

  • fresh parsley sprigs 3-4

  • Oil for drizzling

Method

Step 1

Preheat oven at 180°C. Place a silicon sheet on a baking tray.

Step 2

Slit chicken breasts horizontally without cutting through. Open the flaps to get a butterfly shape.

Step 3

Place them in between two sheets of cling wrap and cover them. Pound with a meat mallet.

Step 4

Open the wrap, sprinkle little salt and pepper powder on top. Place ham slice and cheese slices on top and roll along with the cling wrap tightly into a cylinder. Remove the cling wrap after rolling into the cylinder.

Step 5

Break egg in a bowl. Add salt, 1 tsp pepper powder, refined flour and 1½ tbsps breadcrumbs and whisk well.

Step 6

Combine Parmesan cheese powder, ½ cup breadcrumbs, salt, pepper powder and roughly chopped parsley sprigs in another bowl and mix well.

Step 7

Dip the chicken cylinder in the egg mixture and coat evenly in the cheese-crumb mixture. Place on the baking tray, drizzle little oil all around and put it in the preheated oven. Bake for 18-20 minutes.

Step 8

Remove from oven, slice and serve hot.
