Ingredients list for Apricot Praline
- 42 grams Apricot jam
- 64 grams Butter
- 2 tablespo for sprinkling Castor sugar (caster sugar)
- 18 grams Liquid glucose
- 114 grams Milk chocolate , melted
- 7 grams Cocoa butter
- 2 teaspoons Brandy
- 1 cup Dark chocolate , melted
Method
- Take butter in a bowl, add 2 tablespoons castor sugar and beat with an electric beater till light.
- Add liquid glucose and beat. Add apricot jam and beat well till mixture turns light and fluffy.
- Add melted milk chocolate and cocoa butter and continue to beat. Add brandy and beat well.
- Fill a piping bag with the chocolate mixture and keep it in the refrigerator for 2-3 minutes to set or let it set at room temperature for 10-12 minutes.
- Pipe out the chocolate mixture into small portions on a baking tray, keeping a distance between each portion, and refrigerate for 4-5 minutes or till set.
- Take the tray out of the refrigerator and shape each portion into a ball. Dip each ball in melted dark chocolate, place on the same tray. Sprinkle some castor sugar on top and refrigerate for 2-3 minutes to set.
- Transfer them into a serving bowl and serve.
