Ingredients list for Apricot Praline

  • 42 grams Apricot jam
  • 64 grams Butter
  • 2 tablespo for sprinkling Castor sugar (caster sugar)
  • 18 grams Liquid glucose
  • 114 grams Milk chocolate , melted
  • 7 grams Cocoa butter
  • 2 teaspoons Brandy
  • 1 cup Dark chocolate , melted


  1. Take butter in a bowl, add 2 tablespoons castor sugar and beat with an electric beater till light.
  2. Add liquid glucose and beat. Add apricot jam and beat well till mixture turns light and fluffy.
  3. Add melted milk chocolate and cocoa butter and continue to beat. Add brandy and beat well.
  4. Fill a piping bag with the chocolate mixture and keep it in the refrigerator for 2-3 minutes to set or let it set at room temperature for 10-12 minutes.
  5. Pipe out the chocolate mixture into small portions on a baking tray, keeping a distance between each portion, and refrigerate for 4-5 minutes or till set.
  6. Take the tray out of the refrigerator and shape each portion into a ball. Dip each ball in melted dark chocolate, place on the same tray. Sprinkle some castor sugar on top and refrigerate for 2-3 minutes to set.
  7. Transfer them into a serving bowl and serve.
