Caramel Nut and Popcorn Ice Cream

1 large brinjal
1 medium cauliflower
1 medium bunch spinach
1 medium bunch of fenugreek
100 grams dried red chillies
50 grams of coriander seeds
1 small packet of kadai masala
300 grams of castor sugar
100 grams of walnuts
100 grams of almonds
1 small packet of dried corn kernels
6 eggs
500 ml milk
200 ml fresh cream1 small bottle of vanilla essence
For faster preparation
Cut brinjal into thick slices. Apply salt and set aside for 30 minutes to 1 hour. Prepare the seasoned flour mixture for brinjals and set aside. For gobhi methi cut cauliflower in florets and boiled it in turmeric water sety aside. Clean fenugreek and spinach leaves. Blanch and puree the spinach leaves. Roughly chop tomatoes and grind to a puree. For ice cream make the nougat with nuts and sugar, once set crush it and set aside. Beat together egg yolks and sugar. Boil milk, cream and essence together. Mix together the egg and cream mixture mix well. Mix the nougat in the custard mixture and let it set.
How to go about it
Coat the brinjals with the seasoned flour, shallow fry the brinjals, drain on an absorbent paper and serve. Cook the gobhi methi and then scoop the icecream and serve.
