Ingredients list for Tuna Roll

  • 1 cup Tinned Tuna
  • 4 Wheat Flour Tortillas
  • 3 Boiled eggs peeled
  • 2-3 Spring onion with greens roughly chopped
  • 4 tablespoons Mayonnaise
  • 2 tablespoons Tomato chilli sauce
  • 5-6 Iceberg lettuce leaves
  • for garnishing Fresh rocket leaves

Method

  1. Halve 2 boiled eggs and grind with spring onion and the greens, half the tuna, mayonnaise and tomato chilli sauce to a smooth paste.
  2. Put remaining tuna into a bowl, add ground paste and mix well.
  3. Roughly chop remaining egg and add to the bowl and mix well. Keep in the refrigerator to chill.
  4. Roughly chop iceberg lettuce leaves.
  5. Place some of the egg mixture at one end of each tortilla, put chopped lettuce leaves over it and roll.
  6. Halve the rolls and place them on a serving plate, garnish with rocket leaves and serve immediately.
