Ingredients for Strawberry Mousse Recipe

  • Strawberries washed & hulled 500 grams

  • Double Cream whisked 1 cup

  • Port or sweet sherry 4 tablespoons

  • Gelatin 4 teaspoon

  • Double cream 1 1 /4 cups

  • Thyme a few sprigs

Method

Step 1

Puree strawberries (keeping aside a few for garnish) in a food processor along with castor sugar and yogurt.

Step 2

Gently warm the port or sherry, sprinkle gelatine on the surface and allow to sponge.

Step 3

Stir in thoroughly.Allow to cool.

Step 4

Whisk into the strawberry mixture.Whip the cream stiffly.

Step 5

Keep aside a little for garnishing and fold in the rest gently into the strawberry mixture.

Step 6

Pour into glasses and refrigerate to set.

Step 7

Garnish with reserved whipped cream piped on top, whole strawberries and thyme sprigs.
