Ingredients
- 1 bread loaf, leftover
- 1 1/4 cups almonds, blanched
- 4-6 carlic cloves
- 2-3 cup extra virgin olive oil
- 2 tablespoons vinegar
- Salt to taste
- to taste black peppercorns, crushed
- Fresh coriander leaves to garnish
- Parsley to garnish
Method
- Remove the crust of the bread and tear the rest into small pieces. Soak them in a in a little water in a bowl. Squeeze the bread and set aside.
- Process almonds and garlic in a food processor until finely chopped. Add the squeezed bread and process until well blended. With the motor running slowly gradually add the olive oil to form a thick paste.
- Add the vinegar and process again. Season with salt and crushed peppercorns to taste. Transfer into a bowl and chill.
- Serve garnished with coriander leaves and parsley sprigs.
