Ingredients

  • 1 bread loaf, leftover
  • 1 1/4 cups almonds, blanched
  • 4-6 carlic cloves
  • 2-3 cup extra virgin olive oil
  • 2 tablespoons vinegar
  • Salt to taste
  • to taste black peppercorns, crushed
  • Fresh coriander leaves to garnish
  • Parsley to garnish

Method

  1. Remove the crust of the bread and tear the rest into small pieces. Soak them in a in a little water in a bowl. Squeeze the bread and set aside.
  2. Process almonds and garlic in a food processor until finely chopped. Add the squeezed bread and process until well blended. With the motor running slowly gradually add the olive oil to form a thick paste.
  3. Add the vinegar and process again. Season with salt and crushed peppercorns to taste. Transfer into a bowl and chill.
  4. Serve garnished with coriander leaves and parsley sprigs.
