  • Egg whites 1

  • Icing sugar sifted 1 cup

  • Lemon juice a few drops

Method

Step 1

Put the egg white in a bowl and stir lightly with a wooden spoon. Gradually add the icing sugar and stir well to mix.

Step 2

Mix in the lemon juice to retain whiteness. Royal icing is ideal for piping designs on iced cakes.
