Ingredients list for Quick Corn Cups
- 1 cup American corn kernels
Method
- Boil the corn. Quarter spring onion bulbs and slice thinly. Reserve the stalk. Heat oil in a non-stick pan, add spring onion bulbs and sauté lightly for 1 minute. Add red curry paste, fish sauce, tomato ketchup and mix.
- Drain the corn and add. Mix well. Add brown sugar and mix. Tear basil leaves and add. Mix well and switch off the heat. Put them in small Chinese tea cups.
- Cut a 2 inch piece of spring onion stalk into 4 pieces lengthways and stick one piece into each cup and serve immediately.
