Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Ingredients for Quick Corn Cups Recipe

  • American corn kernels 1 cup

  • Spring onions 2

  • Oil 1 tablespoon

  • Thai red curry paste 1 teaspoon

  • Thai fish sauce 1 teaspoon

  • Tomato ketchup 2 teaspoons

  • Brown sugar 1 teaspoon

  • Fresh basil leaves 8-10

Method

Step 1

Boil the corn. Quarter spring onion bulbs and slice thinly. Reserve the stalk. Heat oil in a non-stick pan, add spring onion bulbs and sauté lightly for 1 minute. Add red curry paste, fish sauce, tomato ketchup and mix.

Step 2

Drain the corn and add. Mix well. Add brown sugar and mix. Tear basil leaves and add. Mix well and switch off the heat. Put them in small Chinese tea cups.

Step 3

Cut a 2 inch piece of spring onion stalk into 4 pieces lengthways and stick one piece into each cup and serve immediately.
