Punjabi Bhindi

Lady fingers tempered with cumin seeds and cooked with onions, green chillies and basic Indian spices. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 250 grams ladyfingers (bhindi), cut into cylinders
  • 2 tablespoons oil 
  • 1 teaspoon cumin seeds
  • 2 green chillies, slit
  • 2 medium onions, sliced
  • ¼ teaspoon turmeric powder
  • 2 teaspoons red chilli powder
  • 2 teaspoons coriander powder
  • Salt to taste
  • 1 teaspoon dried mango powder (amchur)

Method

  1. Heat oil in a non-stick pan. Add cumin seeds and green chillies. Sauté for half a minute. Add onions and sauté till brown.
  2. Add ladyfingers and toss to mix. Add turmeric powder, red chilli powder, coriander powder, salt and amchur. Mix well, lower heat and cook till the vegetable is done.
  3. Serve hot.
