Favourite seafood? Prawns, prawns and more of prawns. A wide variety of small crustaceans, tiny relatives of the lobster, are known as prawns. Prawns are normally translucent when raw but get their distinctive pink or red colour on being cooked. one word of caution – if buying unpeeled prawns, smell for freshness and look for bright, shiny shells that have some spring left in them.

Ingredients for Peppy Prawns Recipe

  • King prawns 300 grams

  • Salt to taste

  • Black pepper powder 1/2 teaspoon

  • Light soy sauce 2 tablespoons

  • Cornflour/ corn starch 2 tablespoons

  • Oil for deep-frying

  • Garlic chopped 3 cloves

  • Ginger chopped 3/4 inch piece

  • Black peppercorns crushed 4

  • Spring onions with greens sliced 3 stalks

Method

Step 1

Peel the prawns keeping the tail intact; devein and wash thoroughly. In a bowl, combine the prawns with salt, a quarter teaspoon of pepper powder, one tablespoon of soy sauce and one tablespoon of cornflour.

Step 2

Mix well and set aside to marinate for fifteen minutes. Mix the remaining cornflour with two tablespoons of water. Heat sufficient oil in a non-stick pan and deep-fry the prawns for two minutes.

Step 3

Drain away the oil keeping a little of it in the pan. Add the garlic and ginger and sauté for two minutes on high heat. Add the prawns, remaining soy sauce, salt, remaining pepper powder, crushed black peppercorns, cornflour mixture and spring onion greens. Stir-fry on high heat for four minutes, or until the prawns are cooked through. Serve hot.
