Ingredients list for Peach and Walnut Salad
- 4 Fresh Peaches tinned
- 4 Walnut Kernels
- 1/2 cup Walnut kernels
- 7-8 Iceberg lettuce leaves soaked in chilled water
- 15-20 florets Broccoli blanched
- 2 tablespoons Eggless mayonnaise
- 2 tablespoons Chilli garlic sauce
- 1/2 teaspoon Red chilli sauce
- a few Mint leaves
Method
- Heat water in a non stick pan, add walnuts and blanch them for 2-3 minutes. Remove the lettuce leaves from water and pat them dry with tissue paper.
- Drain the walnuts, refresh in cold water and put them in a bowl. Roughly cut fresh peaches and also tinned peaches. Put mayonnaise in another bowl, add chilli garlic and mix well. Add red chilli sauce and mix.
- Tear the lettuce leaves and put into a mixing bowl. Add broccoli, peaches, walnuts, mayonnaise dressing. Finely chop mint leaves and add to the bowl. Mix with a light hand.
- Transfer into a serving plate and serve immediately.
