Method

  1. Heat some water in a large non stick pan. Put the marsh mellows in a bowl and place it in the hot water in the pan. Add cream and let the two melt together, stirring frequently.
  2. Cut the fruit cake into small cubes and put some of them in each of 4 martini glasses.Moisten them with the syrup of the tinned peaches. Cut each peach into 8 vertical slices.
    Cool the marsh mellow mixture and add whipped cream.
  3. Add a few drops of vanilla essence and almond essence and mix.Spread some almonds over the cake pieces, pour the marsh mellow-cream mixture over.
  4. Arrange the peach slices along the rim of the glass, put a dollop of whipped cream in the centre, sprinkle some almonds over, chill in the refrigerator and serve.
