Ingredients list for Lemon Possets

  • 1 1/2 cups Double cream
  • ½ cup + 1 tablespoon Castor sugar (caster sugar)
  • Juice of 2 lemons

Method

  1. Heat cream in a non-stick pan. Add castor sugar and bring the mixture to a boil on low heat, stirring continuously.
  2. Once it comes to a boil, let the cream bubble for three more minutes, stirring continuously.
  3. Remove from heat, add lemon juice and keep stirring till it thickens. Set aside to cool for five minutes.
  4. Pour the prepared mixture into four glasses. Cover with a cling film and refrigerate for at least three hours or overnight.
  5. Serve chilled with Italian ladyfingers.
