Ingredients list for Lemon Possets
- 1 1/2 cups Double cream
- ½ cup + 1 tablespoon Castor sugar (caster sugar)
- Juice of 2 lemons
Method
- Heat cream in a non-stick pan. Add castor sugar and bring the mixture to a boil on low heat, stirring continuously.
- Once it comes to a boil, let the cream bubble for three more minutes, stirring continuously.
- Remove from heat, add lemon juice and keep stirring till it thickens. Set aside to cool for five minutes.
- Pour the prepared mixture into four glasses. Cover with a cling film and refrigerate for at least three hours or overnight.
- Serve chilled with Italian ladyfingers.
