You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Kodi Guddu Pulusu Recipe

  • Eggs boiled and peeled 4

  • Turmeric powder 3/4 teaspoon

  • Red chilli powder 2 teaspoons

  • Oil 6 tablespoons

  • Mustard seeds 1/2 teaspoon

  • Fenugreek seeds (methi dana) 1/4 teaspoon

  • Cumin seeds 1 teaspoon

  • Dried red chillies broken 2

  • Green chilli slit 1

  • Ginger paste 1 teaspoon

  • Garlic paste 1 tablespoon

  • Onions finely chopped 2 medium

  • Coriander powder 1 tablespoon

  • Cumin powder 1 teaspoon

  • Curry leaves 8-10

  • Tamarind paste 2 tablespoons

  • Salt to taste

  • Fresh coriander leaves chopped 2 tablespoons


Step 1

Make slashes on the boiled eggs, add ½ tsp turmeric powder and 1 tsp red chilli powder and mix well.

Step 2

Heat 3 tbsps oil in a non-stick pan, add the eggs and sauté, stirring, till light golden.

Step 3

Heat 3 tbsps oil in another non-stick pan, add mustard seeds, fenugreek seeds and cumin seeds and sauté till fragrant.

Step 4

Add red chillies, green chilli, ginger paste, garlic paste and onions and sauté till golden.

Step 5

Add remaining turmeric powder, remaining red chilli powder, coriander powder and cumin powder and sauté.

Step 6

Add ¼ cup water and mix. Add curry leaves and tamarind paste and mix well.

Step 7

Add salt and eggs and mix well. Add coriander leaves and ½ cup water and mix.

Step 8

Cover with the lid and cook on low heat for 1-2 minutes.
