History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Jeera Rice - SK Khazana Recipe

  • cumin seeds 2 teaspoons

  • basmati rice soaked for 30 minutes and drained 1 1/2 cups

  • ghee 3 tablespoons

  • star anise 1

  • cinnamon stick 1 inch

  • black peppercorns 7-8

  • green cardamom 3-4

  • cloves 3-4

  • salt to taste

  • fresh coriander leaves chopped 2 teaspoons

  • Fresh coriander sprig to garnish

Method

Step 1

Heat ghee in a deep non-stick pan, add star anise, cinnamon, black peppercorns, green cardamom, cloves and cumin seeds and sauté till fragrant.

Step 2

Add rice and sauté well. Add 3 cups water and salt and mix well. Let the mixture come to a boil, reduce heat, cover and cook for 10-15 minutes.

Step 3

Add chopped coriander and take the pan off the heat. Gently mix with a fork to separate the rice grains.

Step 4

Transfer into a serving bowl, garnish with coriander sprig and serve hot.
