History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Imli Ka Amlana Recipe

  • Tamarind pulp 4 tablespoons

  • Black salt (kala namak) 1 1/2 teaspoons

  • Black pepper powder 1/3 teaspoon

  • Green cardamom powder 1/3 teaspoon

  • Roasted cumin powder 1 teaspoon

  • Carom seeds (ajwain) powdered 3 teaspoons

  • Sugar 6 tablespoons

  • Salt to taste

  • Fresh mint leaves chopped 8-10


Step 1

Add five cups of water to tamarind pulp and mix well.

Step 2

Grind together black salt, black pepper powder, green cardamom powder, roasted cumin powder, roasted carom seed powder, sugar and salt to a very fine powder.

Step 3

Add this mixture to the tamarind water and mix well.

Step 4

Chill in the refrigerator.

Step 5

Pour into Old-Fashioned glasses.

Step 6

Decorate with fresh mint leaves and serve chilled.
