Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Gundar No Sandho Recipe

  • Gum resin 250 grams

  • Jaggery

  • Ghee 1 1/3 cups

  • Jaggery (gur) grated 2 1/2 cups

  • Dry ginger powder (soonth) 1/2 teaspoon

  • Tea masala 2 teaspoons

  • Piperi mool (ganthoda powder) 1/2 teaspoon

  • Dry coconut (khopra) grated 1 cup


Step 1

Heat ghee in kadai, fry gum raisin till it resembles small balls. Drain and crush.

Step 2

Add grated jaggery to the remaining ghee and cook till the jaggery melts. Add dry ginger, tea masala, piperi mool and coconut to the crushed gum.

Step 3

Add this mixture to the melted jaggery and mix well. Pout into a greased parat and smoothen the top. Keep aside to set.

Step 4

When cool, cut into squares or diamonds and store.
