Ingredients list for Green Apple and Cheese Soup

  • medium Green apples
  • 2 tablespo for garnishing Processed cheese grated
  • tablespoons Butter
  • medium Onion chopped
  • 1 Bay leaf
  • inch stick Cinnamon
  • 4-5 Black peppercorns
  • 3-4 Garlic cloves chopped
  • to taste Salt
  • cup White wine
  • teaspoons Fresh cream

Method

  1. Heat butter in a non-stick pan. Roughly chop apples.
  2. Add onion to the pan and sauté for a minute. Add bay leaf, cinnamon and peppercorns and sauté.
  3. Add garlic and sauté for 2 minutes. Add apples and mix well. Add salt, mix well and sauté for 3-5 minutes.
  4. Add white wine, stir well. Add sufficient water, stir to mix, cover and cook for 8-10 minutes.
  5. Remove from heat and blend using a hand blender. Strain soup into a bowl.
  6. Transfer strained soup into a non-stick pan on heat and bring to a boil.
  7. Add cheese and whisk well till the cheese melts. Add cream, mix well and heat for a minute.
  8. Serve piping hot garnished with grated cheese.
