Ingredients list for Frozen Fruit Pudding

  • 500 millilitres Chocolate Icecream softened
  • 1/2 cup Chickoo pureed
  • 1/2 cup Glazed cherries chopped
  • 1/2 cup Apricots,chopped seedless
  • 3 tablespoons Raisins
  • 1 tablespoon Rum
  • 2 tablespoons Cocoa powder optional
  • 8-10 Roasted almonds whole

  1. Combine ice cream, chikoo puree, cherries, apricots, raisins and rum. Pour into a greased and lined 750 millitre capacity pudding basin.
  2. Freeze for two to three hours or until firm. To serve, demould, dust with cocoa powder and garnish with roasted almonds. Cut into wedges and serve.
