Ingredients for Feta Stuffed Chillies Recipe

  • Red Chillies slit and deseeded 12 large

  • Feta Cheese drained and finely chopped 4

  • Feta cheese 150 grams

  • Spring onions finely chopped 2

  • Fresh mint leaves chopped 2 teaspoon

  • Fresh basil leaves chopped 1 teaspoon

  • Salt to taste

  • Black peppercorns freshly ground to taste

  • Extra virgin olive oil 3 tablespoons

  • White wine vinegar 1 tablespoons


Step 1

Heat the Grill Pan. Place the chillies in it and grill for six to eight minutes, turning occasionally. Transfer into a plastic bag for a few minutes and peel away the skins.

Step 2

To make the filling, combine sun-dried tomatoes, feta cheese, spring onions, mint, basil, salt and pepper in a bowl. Mix well. Stuff the chillies with the filling and arrange on a serving dish.

Step 3

Drizzle olive oil and vinegar over them. Chill in refrigerator for half an hour and serve immediately.
